A little history.

The ancient or common mandarin was introduced in Valencia for its cultivation in 1845, but its origin, in reality, dates back millennia.

She was actually born in the Southwest of China daughter of a wild mandarin mother who lived eight million years ago and of a father, the sweet orange and for thousands of years its appearance, taste and smell have remained unchanged throughout millennia.

It was discontinued in the mid-twentieth century for modern varieties of mandarin with fewer seeds and is practically extinct.

We have recovered it with a lot of effort for its exquisite flavor and it is considered perhaps the tastiest citrus fruit, that is why some authors call it Citrus Deliciosa.

A complex flavor.

This mandarin has a flavor that we could qualify as complex, a flavor that contains many flavors with many nuances. Borrowing the definition of great wines, we will say that it has the peculiarity of stimulating the different taste buds at the same time, going from sweet, to acid and bitter at the same time, with a great breadth of mouth. The mouth is full of flavor, of various flavors that last over time and surprise.

Its rind is as aromatic as it is fragrant, which is why, together with the pulp and seeds, it is ideal to make an exquisite mandarin jam.
