The Cedrat "citrus medica L." is a shrub with light green leaves, produces large orange blossom flowers in corsages mainly during spring.

The fruits of oblong to spherical, with a more or less rough surface, reach large size (from kilo to kilo and a half). They have a very thick crust with a highly developed albedo so the pulp is very reduced with acid nuances. It contains many seeds.

The peculiarity of this fruit is to be very aromatic with a sweet touch.

Its origin is very old and is probably the first citrus that was grown in Europe.

Cedrat is mainly used in confectionery, confiting the crust along with its albedo and also to make jam for its amount of pectin.

The ripening date starts in December until February.
